ZUCCHINI CASSEROLE

Quick, tasty and nutritious …and beautiful.

1 ½ lbs small zucchini, sliced in ¼ inch rounds
1 small onion or bunch of green onions
2 Tbs butter
1 4 oz can diced chilies
3 Tbs flour
½ tsp Salt
¼ tsp pepper
1 ½ cups grated jack cheese
1 egg
1 cup cottage cheese
3 Tbs minced parsley
½ cup grated Parmesan cheese

Place zukes, onion & butter in skillet and saute until tender. Mix in drained chilies, flour, salt and pepper. Turn into 9” pie plate sprayed with pam. Sprinkle with jack cheese. Mix egg, cottage cheese & parsley. Spoon over top. Sprinkle with Parmesan cheese. Bake at 400 for 45-60 minutes or until just starting to brown.

Let set 10 minutes before serving.
